Your lists of objectives aren't the only things you can do at the party! They're meant to push the story along and give you a guide on how to act. Do what feels natural for your character. Don't be afraid to go out on a limb.

Try to stay in character as best as you can. If you need to break character for some reason, quietly inform the host and sort things out with him/her.

You'll have to end your current game and start from scratch. Tap "PLAY" and scroll to the bottom of the page and tap on "End Game". No, not all characters have to be assigned. Just as long as you assign the core characters.
